Indonesian-Style Peanut Sauce

This Indonesian-Style Peanut Sauce, a staple of Southeast Asian cuisine, is inspired by the recipe of Tokusen's co-founder's Indonesian mother. 
It is the perfect sauce for Gado-Gado, the Indonesian salad showcased in the photo above, satay skewers, spring rolls and dumplings.

INGREDIENTS

2 cloves Garlic
Shallot
1 teaspoon Grated ginger
1 teaspoon Vegetable oil of your choice
1 3/4 cup Water*
1 cup Natural peanut butter of your choice, without additives
2 tablespoons Kecap Manis (Indonesian sweet soy sauce)
2 tablespoons Thick soy sauce - Tamari 
1 tablespoon Sambal Oelek
1 tablespoon Sugar of your choice 
1 teaspoon Lime juice or tamarind paste

 *Substitute: use coconut milk instead of water

PREPARATION

  1. Chop the garlic and shallot, and grate the ginger.
  2. Heat a saucepan over medium heat, add the oil and sauté the ginger, garlic and shallot. When the ingredients begin to caramelize, deglaze with water*.
  3. Bring the liquid to a boil and add the peanut butter. Stir until a smooth, creamy consistency is obtained. If the oil separates from the mixture, add water and stir. Reduce heat to medium-low.
  4. Add Kecap Manis, the thick soy sauce, Sambal Oelek, sugar and lime juice or tamarind paste and bring to a boil.
  5. Remove from heat and let cool before serving.
  6. Selamat makan!
