Indonesian-Style Peanut Sauce
This Indonesian-Style Peanut Sauce, a staple of Southeast Asian cuisine, is inspired by the recipe of Tokusen's co-founder's Indonesian mother. It is the perfect sauce for Gado-Gado, the Indonesian salad showcased in the photo above, satay skewers, spring rolls and dumplings.

INGREDIENTS
2 cloves | garlic |
1 | shallot |
1 teaspoon | grated ginger |
1 teaspoon | vegetable oil of your choice |
1 3/4 cup | water* |
1 cup | natural peanut butter of your choice, without additives |
2 tablespoons | Kecap Manis (Indonesian sweet soy sauce) |
2 tablespoons | thick soy sauce - Tamari |
1 tablespoon | Sambal Oelek |
1 tablespoon | sugar of your choice |
1 teaspoon | lime juice or tamarind paste |
*Substitute: use coconut milk instead of water
PREPARATION
- Chop the garlic and shallot, and grate the ginger.
- Heat a saucepan over medium heat, add the oil and sauté the ginger, garlic and shallot. When the ingredients begin to caramelize, deglaze with water*.
- Bring the liquid to a boil and add the peanut butter. Stir until a smooth, creamy consistency is obtained. If the oil separates from the mixture, add water and stir. Reduce heat to medium-low.
- Add Kecap Manis, the thick soy sauce, Sambal Oelek, sugar and lime juice or tamarind paste and bring to a boil.
- Remove from heat and let cool before serving.
