Yamatoni sauce

Yamatoni sauce is a traditional Japanese preparation of beef simmered in a sweet and sour sauce. It is composed mainly of soy sauce, sugar, mirin and ginger, offering a rich, umami flavor. This type of sauce is often used to accompany rice or as a garnish for bento dishes. Its name refers to the Japanese cooking technique yamatoni, in which ingredients are slowly simmered in a fragrant sauce.
