Ise Kojiya - Koji fermentation since 1816
Founded in 1816, Kojiya was established on Shinji-dōri Street, in the heart of the town of Ise in Mie Prefecture, opposite one of Japan's most famous shrines, the Ise Shrine. For over 200 years, the company has remained in the same family, currently headed by Mr. Kengo Kawamura and his wife Emiko Kawamura, representing the 8th generation.
True to its roots, Kojiya combines traditional craftsmanship with innovation. While the ancestral know-how of kōji remains the mainstay of their production, the company innovates with creations adapted to contemporary tastes, such as miso pudding or amazake.
Passionate about natural fermentation, Kojiya's craftsmen master the many varieties of kōji with precision, using them to create misos with subtle aromas and unique depth, as well as fermented condiments of great richness.
