Founded in 2016 in Sekigane, in the town of Kurayoshi, Tottori prefecture, Nishikawa Shoten began its business as a wasabi wholesaler. Since then, it has expanded its range with processed products such as wasabi miso and, in 2017, wasabi oil.
Wasabi, Sekigane's local specialty, is grown in clear water from Mount Daisen. Growing wasabi requires pure, abundant water and permeable soil, ideal conditions present in the Sekigane region, home to the largest aquatic wasabi fields in western Japan.
In 2018, Nishikawa Shoten opened a research center, in collaboration with Shimane University, dedicated to the cultivation and improvement of wasabi seedlings. Since then, the company has strived to develop innovative products based on authentic Japanese ingredients and advanced technologies, while contributing to the protection of the environment.
Nishikawa Shoten strives to put a little of its region into its products: “we hope to inspire you to visit our production region”.
About wasabi oil:
To make this product, Nishikawa Shouten infuses the essence of wasabi root in rice bran oil. It's ideal as a seasoning for carpaccios and salads, but also goes perfectly with grilled meats and, of course, as a condiment for your sushi.
