Chahan, the Japanese Fried Rice
Chahan, also called yakimeshi, is an excellent way to user leftover rice and make a quick and filling dish. Sauté your leftover rice with an egg and your favorite vegetables and that's it!

INGREDIENTS

Cooked Japanese White Rice |
30 g |
Shiitake Mushrooms |

Frozen Corn |

Frozen Peas |

Soybeans (edamame) |

Light Soy Sauce – Usukuchi |
2 tablespoons |
Dark Soy Sauce – Haizakura |

Sesame Oil |

Shichimi Togarashi |

Black Sesame Seeds |
PREPARATION
- In a skillet over medium heat with a little cooking oil, fry the egg until it is cooked through. Break it into pieces and set aside.
- Slice the shiitake mushrooms. In the same skillet over high heat, sauté the mushrooms in sesame oil for 2-3 minutes, or until golden brown. Deglaze with the light soy sauce.
- Add the peas, corn, and soybeans (edamame) and a tablespoon of water. Sauté for 1-2 minutes.
- Add the rice taking care of breaking up the lumps.
- Add the dark soy sauce and shichimi togarashi. Stir-fry the ingredients until the rice starts to crisp slightly. This may take 3-4 minutes.
- Mix in the egg, chopped green onions and the black sesame.
- Serve in a bowl forming a small mound with the rice.
