Salmon Teriyaki

Salmon teriyaki is a classic Japanese dish that never goes out of style. Here is a simple traditional recipe, ideal for a meal on the go, to be served with a bowl of steamed white rice.

 INGREDIENTS

250 g

Salmon fillet

3 ½ tablespoons

Sake

3 ½ tablespoons

Dark soy sauce – Haizakura

3 ½ tablespoons

Mirin

½ tablespoon

Brown sugar

1 pinch

Salt

 

PREPARATION

  1. Cut the salmon into two 125-grams fillets.
  2. Sprinkle a cutting board with salt, place the salmon skin side down on the salt and sprinkle with salt again. Leave to rest for 15 minutes.
  3. In the meantime, prepare the teriyaki sauce by mixing the Haizakura dark soy sauce, sake, mirin and sugar in a saucepan and bring to a boil. Turn off the heat and let stand.
  4. In an oiled skillet over high heat, place the salmon fillets skin side down. Cook the four sides of the salmon for about 1 minute each.
  5. Pour the teriyaki sauce over the salmon fillets and cook another 2 minutes.
  6. Remove the salmon fillets and reduce the sauce until it is slightly syrupy.  
  7. Serve the salmon glazed with teriyaki sauce.
