Classic Salmon Teriyaki
Salmon teriyaki is a classic Japanese dish that never goes out of style. Here is a simple traditional recipe, ideal for a meal on the go, to be served with a bowl of steamed white rice.

INGREDIENTS
250 g |
Salmon fillet |
3 ½ tablespoons |
Sake |
3 ½ tablespoons |
Dark soy sauce – Haizakura |
3 ½ tablespoons |
Mirin |
½ tablespoon |
Brown sugar |

PREPARATION
- Cut the salmon into two 125-grams fillets.
- Sprinkle a cutting board with salt, place the salmon skin side down on the salt and sprinkle with salt again. Leave to rest for 15 minutes.
- In the meantime, prepare the teriyaki sauce by mixing the Haizakura dark soy sauce, sake, mirin and sugar in a saucepan and bring to a boil. Turn off the heat and let stand.
- In an oiled skillet over high heat, place the salmon fillets skin side down. Cook the four sides of the salmon for about 1 minute each.
- Pour the teriyaki sauce over the salmon fillets and cook another 2 minutes.
- Remove the salmon fillets and reduce the sauce until it is slightly syrupy.
- Serve the salmon glazed with teriyaki sauce.
