Elaboration Method
Kanzuri is a simple blend of togarashi peppers, salt, rice koji and yuzu. The balance of flavors is achieved by first fermenting the togarashi peppers on snow. The chili blend is then fermented for 3 years before bottling.
Tasting Notes
Spicy attack with notes of yuzu and an intense umami flavor.
Uses
As a garnish on meat, to season pasta, as a dipping sauce for dumplings, to spice up vinaigrettes or soups.
